Kolsch is a bright, straw-yellow beer originating in Cologne, Germany. This style has mild hop character, being less bitter than a standard German pale lager. Brewed in the style of an ale, but cold-conditioned in the style of a lager, this clean, refreshing beer is a good starter for those newer to craft beer.

Like the Femme Fatale it's named after, Phyllis is a beautiful but dangerous blonde. Following the philosophy that Belgians are best at their most simple, the malt bill is only Pilsner malt and sugar. Four additions of German Hallertau Blanc a wine-like fruitiness and plenty of Fatale bitterness.
