When Carissa, Jeff and I started talking about this issue of the newsletter over a month ago, I had no idea how I would approach my section but I knew I had plenty of time to figure it out. Well, here it is, the night before the issue goes out and I’m in the same place I was a month ago!
It’s hard to believe it was only one year ago tonight we were putting the final touches on the taproom before our Grand Opening. We held a soft opening on the previous Saturday evening (August 1st) and were ready to go. To say that it has been a long year may actually be the understatement of my life.
I’m still burning the candle at both ends with my day job at Western Digital and my night/weekend job at LTS. With more help in the brewery from Brett and Erik, I’ve been able to spend a little more time with my family the last few months – and it has been very nice! Eventually we will hire a full-time brewer so I can focus more on brewery operations management and distribution (and my day job!) but for now I think we’ve hit a pretty good stride.
We’ve had some fun in the brewery lately – after wrapping up the last of the summer seasonal brews, we brewed a Belgian-style Dark Strong ale that clocks in at about 9.8% ABV. It was the largest beer we’ve brewed on the big system at 799# of malt and 64# of Belgian candi syrup. You’re going to have to wait for this one though – we’re going to bottle condition and age it for several months before release. There may have been some whispers of a small barrel aging program going around too – but who can tell? Repeats of several recipes, including Dunkelstiltskin, Introspection and Trinity are under way, and I’m planning to brew an Oktoberfest lager in the next couple weeks.
